Leftovers: A Mother's Treasure

Last night we made tacos for dinner.  Of course, they were 100% grass-fed beef tacos on organic corn shells with homemade guacamole and fresh-from-the-farm strawberry salsa.  I wasn’t really in the mood for tacos, per se, so I made some organic Quinoa to replace my taco shell and wilted greens to balance out the margarita I was planning on having.  

Like most nights, we had leftovers.  Now I don’t know about you, or what goes on in your home, but in mine leftovers are what become “Mommy, what is that?” the next day.  They are my most favorite meal because all the work is already done and the flavors can’t be beat.

My guess is that when you cook a meal, you follow the food pyramid.  I’m guessing you offer a protein, a starch and a veggie.  Am I right? Well, even if I’m half right....this method works almost all of the time.  If it doesn’t then just eat the damn left overs as they are...no waste, ever!

Like I was saying, I had leftovers and I don’t like throwing food away, ever!  So with my 1 cup of leftover Quinoa, 1 cup of leftover taco meat and 1 cup leftover greens I created a mixture that with adding 1 egg would become another great spin on the Quinoa Burger.


I tossed all my leftover ingredients into a large mixing bowl and added the egg to it.  I coated a large saute pan with EVOO and heated it to a medium/high heat.  Just make the patties like you would a burger and lay them gently into the hot oil letting each side get crispy and golden brown.  Total yumminess  to my family and practically a night off for me...look who’s winning now!!  I think I’ll treat myself to another one of those margarita’s to celebrate.



....Oh, did I mention I baked a chicken the night before that became this morning's breakfast??
