Recipe: Chocolate-Lime Sherbet



Chocolate - Lime Sherbet
serves a lot of people



1 1/2 cups water
1 cup organic cane sugar
1/2 cup 100% cocoa powder
1/4 teaspoon high quality sea salt
6-ounces bittersweet chocolate, finely chopped (about 1 cup)
1 cup whole or 2% milk
1/2 teaspoon pure vanilla extract
1 teaspoon finely grated lime zest, plus more for garnish
2 tablespoons fresh lime juice


1. Whisk together water, sugar, cocoa powder, and salt in a large saucepan over medium heat. Bring to a boil; whisk continuously and let boil for 30 seconds. It will start to bubble up furiously, remove from heat for a couple seconds if it looks like it may bubble over.
2. Remove from heat and add chocolate, whisking until melted. Stir in milk, vanilla, lime zest, and lime juice. Taste for lime intensity, add more juice if desired.
3. Working in batches, transfer to blender and blend on high for 20 seconds. Do not fill blender more than halfway, hot mixtures have a tendency to explode. Transfer to a large bowl, cover, and refrigerate for at least 8 hours. You want the mixture to be ice cold so it will freeze properly in the ice cream maker.
4. Freeze mixture in ice cream maker according to manufacturer’s instructions. Serve garnished with lime slices or zest.
