Recipe: Grilled Country Ribs with Sweet & Tangy Barbecue Sauce

serves 4

2 tablespoons olive oil
1 small onion, minced
4 cloves garlic, minced
1 tablespoon Spice & Tea ground yellow mustard
½ teaspoon Spice & Tea  smoked sweet paprika 
¼ teaspoon red pepper flakes
3 tablespoons brown sugar
2 cups ketchup
1/3 cup Worcestershire sauce
1/3 cup cider vinegar
1 tablespoon molasses
2 1/2 pounds boneless pork country ribs, cut from shoulder
4 scallions, sliced

Heat oil over medium in medium saucepan. Add onion and cook, stirring occasionally, until deep golden  brown, about 7 minutes. Stir in garlic, mustard powder, paprika, and red pepper flakes; cook for 30 seconds. Stir in sugar, ketchup, Worcestershire, vinegar, and molasses. Simmer, stirring often, until thick and vinegar has mellowed, about 5-10 minutes. Cool to room temperature. Pour 1 1/2 cups of cooled sauce in large bowl, submerge pork in sauce and toss to coat. Cover and let marinate in fridge for at least 2 hours, up to overnight. Heat gas grill to high, oil grates. Grill ribs, turning often, until nicely charred and just pink in the middle, about 10-12 minutes. Top with scallions and serve.
