Recipe: Deconstructed Kebabs


If you're living an urban lifestyle like I am, sometimes having a grill in the backyard can be something we miss, huh?  I use my grill pan, get it real hot and let the smoke just fill up the kitchen.  Feels like summer for sure.  Turn MGMT Radio really loud on Pandora, drink a Strongbow and grill!!

 

1 Zucchini (sliced into circles)

1 Red Bell Pepper (Cubed)

1 Red Onion (skin off, cubed)

1 package of Baby Bella's (stems seperated from tops, use both parts)

5 cloves of Garlic (skin off)

2 tbsp of Extra Virgin Olive Oil

Sea Salt

Pepper

 

Heat a grill or grill pan until HOT enough for grilling. Take all of your veggies and garlic, toss them into the olive oil. Salt and Pepper to taste and grill until veggies edges are chared  to your liking.
