Recipe: Spicy Green Mango Slaw
makes 3 cups
3 unripe mangoes 1 cucumber, peeled and seeded 3 scallions, thinly sliced on the bias 2 tablespoons fresh lime juice 1 tablespoon soy sauce 2 tablespoons honey 1 clove garlic, minced 2 red fresno chili peppers, minced coarse sea salt
With a very sharp knife, peel the skin from the mangoes. Using the large holes of a box grater, grate the mangoes and cucumber into a large bowl. Add scallions. Whisk together the lime juice, soy, honey, garlic, and chili pepper. Toss dressing with mango-cucumber mixture. Season lightly with salt. Store in an airtight container in the fridge.
